Kale is one of my fav foods in the world! This isn’t just because it’s a bonafide superfood, but it’s also because this green is hardy and blasting with flavor. Kale is a great addition to ANY smoothie or salad. “All hail to kale!”
Kale Continued…
– Is anti-inflammatory, low cal, has antioxidants, and is low carb.
– Contains vitamins E, C, and A, as well as calcium and potassium.
– Has more iron than beef, more calcium than milk, and even more vitamin C than spinach!
– Good for the eyes, teeth, reduces the risk of heart disease and cancer, lowers cholesterol, strengthens bones, and aids weight loss.
Kale’s best friend? Lemon, which enhances phytonutrients.
Hence my frequent kale based salads, dressed with freshly squeezed lemon juice and EVOO, as well as my love for kale based smoothies.

I LOVE Kale *bows down* and eat it in a million dishes though the one thing i struggle with it in is in juice or smoothies.

I’ve been substituting the same quantity that I usually use of baby spinach and not changing the recipe to allow for the stronger taste of kale. Will check out your recipes thanks! (I’ve got a kale and chickpea salad recipe that pretty tasty too).

I get plenty of kale from my b/f parents’ garden and have to think of various ways to use it up. Last night I tweaked the Indian spinach paneer curry recipe and made cold salad with feta cheese and lemon juice. It was really yummy. Today I mixed leftover with a mashed hard boiled egg and it was also yummy. Reminded me of curried egg with spinach. 🙂
Lucky you!! I would love a garden but living in the city can be a little limiting. At least I have my basil plant taking in the sunlight through my kitchen window! That recipe sounds delicious! I love how you used your leftovers to make a whole new meal out of it! Awesome 🙂
